Fitness Update – Week One

So here is my first update after my first official week on the fitness train. All in all it went okay; not great but also not terrible. The week was not the best I could have done, but I am thinking of it as a good start. Overall, the week had ebbs and flows. There were a couple of days where I just felt like a blob (for lack of a better term) and didn’t want to do anything (including cooking). What I decided, is sometimes we have blob days and that is okay. But instead of letting one blob day ruin the whole week, let it mess with that day then bounce back. But lets talk about how things went.

Acai Bowl Deliciousness

Quick, easy and healthy meals are my favorite type of meals. I also don’t necessarily differentiate what types of food I eat for different meals. For the most part, I have a few meals that I love to make and will eat at any time of the day. A lot of people find that weird and I can’t really argue with them. I have weird eating habits, what can I say? One of my favorite go-to meals that I will eat when ever is a delicious acai bowl. Memphis doesn’t exactly have a large acai bowl market, so after I moved I started making my own. So here goes with my recipe for a yummy acai bowl.

Hawaiian Chicken Tacos

Eating Well is one of my favorite cooking magazines and websites to find recipes in/on. The recipes are fairly healthy and easy to adapt to fit your needs and tastes. Being from California tacos and fajitas are one favorite foods and they can be quick and easy to make. One of my recent favorites is an adaptation of this Eating Well recipe. Plus the recipe is dairy, egg, nut and gluten free!

Summer Salad

Summer Salad

Cooking. One of my favorite hobbies. Recently, I have been trying to cut back how often I eat out, which means I have been cooking a lot more. The problem is I am not the type of person that can eat the same thing over and over again. My max for eating the same thing in a week is about three-four times. This means, I have been trying A LOT of new recipes. This is one of my favorites and was adapted from this recipe from Eating Well. It is super easy to make and yummy as can be!
