Fig & Goat Cheese Tartlette

On this addition of single serve appetizers… lol. I made these a couple of weeks ago and oh my gosh were they amazing. We promptly ate them all in three days and I made a second batch. These are perfect for any fall get together and can’t wait to make them for Thanksgiving. A huge plus is they are so quick and easy to make!

Fig & Goat Cheese Tartlettes

A easy and delicious single serve appetizer recipe. A little bit salty, a little bit sweet and a little buttery.

Ingredients
  

  • 2 Large Yellow Onion (thinly sliced)
  • 4 tbsp Unsalted Butter
  • 1 tsp Salt
  • .5 tsp Black Pepper
  • 1 box Frozen Puff Pastry Dough
  • 1 egg
  • 1 jar Fig Jam
  • 1 container Goat Cheese

Instructions
 

  • Preheat your oven to 400°F.
  • Remove the pastry puff dough from the packaging and leave on the counter to thaw. 
  • In a cast iron pan over medium heat, melt the 4 tablespoons of unsalted butter. 
  • Add onions to melted butter and stir until coated. Once onions are translucent, add salt and pepper. Allow to sit, stirring occasionally. The onions will begin to turn brown. Once they are a rich brown, remove from heat and place in a separate bowl. 
  • Unroll the puff pastry and use rolling pin to roll out pastry seems. Do this with both sheets of dough.
  • Cut the dough into 4 strips, then 4 squares in each strip. Do this with both sheets of dough. Place the squares on a cookie sheet lined with parchment paper or a silicon baking mat.
  • Beat egg and brush on the edges of each square. 
  • Put roughly one small spoonful (about 1 heaping teaspoon) into the center of each pastry square. Spread slightly. 
  • On top of jam, place a small spoonful of caramelized onions. I just try to evenly distribute. 
  • Place crumbled goat cheese on top onions. 
  • Place the cookie sheets in the oven and back for 16-18 minutes. The outside of the pastry should be puff up and turn golden brown before removing from the oven.
  • Let cool for at least five minutes before serving.
