So… I never got to finish this series because my move got in the way. But hey, better late than never, right? I am so excited to share the grand finale, the big shebang, the final countdown to this series that I started I couple months ago.  If you want to re-read those, her is Part 1, Part 2 and Part 3 at your easy linked convenience.

If you couldn’t tell, I absolutely LOVED my time in New York a while back. Now that some time has passed, I am itching to go back to this beautiful city. I have never been the type of person that dreams about moving to New York, but after this trip I could definitely see the attraction and would be lying if the thought of a move to the Big Apple didn’t cross my mind. Welp. It has been a full two months since I moved to Seattle, which is still a bit hard for me to wrap my head around. For so long, moving to Seattle was a goal, a dream, but always felt just out of grasp. When I visited Seattle for the first time almost three years ago, I knew it was a place that I could live and wanted to live. I had recently graduated from college and was in full job search mode. The minute I got back from my trip, I turned the whole focus of my search to Seattle. Obviously at the time, a move to Seattle was not in the cards. So instead I moved to sweet Memphis.

Memphis. The sweet city that taught me more than I could ever imagine. The city that challenged me and pushed me. The city that tested me and forced me to grow. The city that gave me friends that will stand next to me at my wedding, be aunties to my kids and are always there when I need them. The city that showed me a different way of life and forced me to leave my comfort zone. To you Memphis, I say thank you.

I have loved all of my recent travels, but my trip to New York was one that I was especially excited for. Acai Bowl Deliciousness

Quick, easy and healthy meals are my favorite type of meals. I also don’t necessarily differentiate what types of food I eat for different meals. For the most part, I have a few meals that I love to make and will eat at any time of the day. A lot of people find that weird and I can’t really argue with them. I have weird eating habits, what can I say? One of my favorite go-to meals that I will eat when ever is a delicious acai bowl. Memphis doesn’t exactly have a large acai bowl market, so after I moved I started making my own. So here goes with my recipe for a yummy acai bowl.
